Ají Amarillo is the hottest new thing here in the U.S., but it' has been the favorite of Peru for hundreds (if not thousands) of years. Used in Ceviche and many more Peruvian specialty dishes, it has the fruity flavor of a habanero with a much milder heat level. We’re calling it the saffron of Peru. It has a beautiful golden color and flavor and very few people grow this heirloom variety.

Yeah, it’s expensive… we know. Due to the very specific growing conditions needed, this pepper has a very limited season and therefore, depending on the year, we may only get a few weeks of full production. Therefore, it’s limited in quantity and a limited edition product.

If you can find something this tasty and fresh elsewhere for cheaper, let us know! we’re fans of it too… but we don’t get to eat much of this one in our house due to limited supply.
