People across Galicia enjoy these small peppers by the plateful.

People worldwide flock to Tapa Bars when they hear Padróns are back on the menu. Quickly seared, blistered, or fried in olive oil and sprinkled with a good sea salt, they can now be found far from their home in Padron in Northern Gallicia.  A pepper that traces it’s heirloom roots to the discovery of the “Americas” and grown for over 400 years. A tapa that only requires good Padrón peppers and high grade olive oil.
This is Happy Quail Farm’s 15th season of Padron production. Our experience has taught us the secrets of growing true “tapa grade” Padrón peppers. There is always the chance of a hot pepper-a “rullette” chance of 1 out of 6 to 10 peppers is correct, and they should be 60 to 80 peppers to the pound. Pick the peppers too small and they have no taste, grown in the wrong climate or improperly handled then stored and the Padróns can be painfully hot.
Japanese Shishito peppers have piggybacked on the Padrón popularity and are now often used instead. Not really similar in flavor - Shishitos are easy and cheap to produce and seldom get as hot as the rouge Padrón pepper. Happy Quail Farm grows Shishitos peppers also but honestly they pale in taste when compared to Padrón peppers.
Our Padróns are grown and sorted correctly. We harvest and ship same day. We ship 2nd day USPS  to most location but can offer overnight or UPS if necessary. You can rely on our Padrón peppers to be the best and a pleasure to eat.

Note:

Padrón peppers can be stored in in your refrigerator for seven to ten days, in a bag or crisper drawer - use a damp cloth or paper towel to protect them from water loss.
